3 eggs
1 c. vegetable oil
1 2/3 c. sugar
1 c. brown sugar
2 tsp. vanilla
2 c. asparagus, cleaned and grated, or shredded in food processor
3 c. flour
1/4 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon



Directions:
Directions:
Beat eggs until light and foamy. Add oil, sugars, vanilla and asparagus, mix lightly.

In separate bowl, mix flour, baking powder, salt, soda and cinnamon. Add flour mixture to liquid mixture and blend. Bake in greased loaf pan at 325 degrees for one hour or until done. Yields two 5 X 9 inch loaves.
