beets, onion, cilantro, olive oil, lime juice
optional: salt, sugar

Directions:
Directions:
Steam desired amount of beets until tender. Cut into bite-size chunks.
Finely chop approx. 1/4 cup of onions and 1/4 cup of cilantro.
Combine above ingredients and drizzle with 1-2 tbsp olive oil and juice from one lime.
May add a pinch of salt and/or sugar to taste.
Serve warm or cold.

My friend Kelley used to make this a lot when she was living in Cairo. It's a refreshing hot-weather dish.
