1 apple in pieces, unpeeled and uncored Rome Beauty 2 c. cider vinegar 1/2 c. sugar (for each cup of pulp) few grains salt 1/2 t. cinnamon 1/2 t. clove 1/4 t. allspice 1/8 lemon (grated rind and juice)
Cover apple with vinegar in saucepan and cook over low heat until sugar dissolves. Uncover and cook quickly until thick and smooth when you spoon a bit onto a cold plate. Stir with a wooden spoon so it will not stick and burn.
