4 medium zucchini
1/4# bulk pork sausage
1/4 C. onion, chopped
1/2 C. fine cracker crumbs
1 egg, slightly beaten
1/2 C. Parmesan cheese, grated
1/4 tsp. salt
1/4. tsp. thyme
1/4 tsp. garlic salt
1/4 tsp. pepper

Directions:
Directions:
Cook whole zucchini in boiling salted water until barely tender, 7 to 10 minutes.
Cool and cut in half lengthwise.
Scoop squash from shell and mash or chop.
Retain shell.
Cook sausage with onion, drain and stir in mashed zucchini.
Reserve 2 T. cheese, then add all remaining ingredients to squash mixture and mix well.
Spoon mixture into zucchini shells and place filled shells in shallow baking dish.
Sprinkle with reserved parmesan cheese.
Bake in 350 degree oven for 25-30 minutes.
