2 1/2 pt. cooked or canned salmon (or other cooked fish)
1/2 c. green onion, chopped
3/4 c. water
1/3 c. mayo
1 T. lemon juice
1 c. shredded mozzarella cheese
1 pkg. any flavor prepared stuffing mix (My favorite is Stovetop Cornbread Stuffing.)

Directions:

Mix all ingredients together and refrigerate for 10 minutes. Shape into patties and cook about three minutes until golden brown. Serve with tartar sauce, if you wish.

District Library/Media Services Coordinator; Holbrook, Arizona. I use fresh or canned salmon that my sons and I catch in Alaska. These are a favorite in my family. You can use other kinds of fish also. My daughter's children named them "Crabby Patties."
