1 lb ground chuck
1 c salsa, mild or medium
1 c whole kernel corn
1 c grated cheddar cheese
1/2 tsp chili pepper
1 pkg corn muffin mix

Directions:
Directions:
Brown ground chuck in iron skillet, drain. Add corn, salsa & cheese. Stir. Prepare muffin mix according to package directions.

Pour beef mixture into a baking dish, then pour muffin batter on top of beef mixture. Bake until cornbread is golden brown, approximately 20 to 25 minutes.
