6 medium potatoes
Water
Dash salt
3 T. oil
1/2 tsp. salt
Dash black pepper
1/2 tsp. oregano
1/2 tsp. thyme
Dash cayenne pepper
1/3 c. grated Parmesan cheese
2 T. grated cheddar cheese

Directions:
Directions:
Scrub unpeeled potatoes well. Cut each potato in half lengthwise. Then cut into even wedges. Boil wedges for 5 minutes in salted water. Drain. Pat dry.
Spread wedges in a single layer on a lightly grease baking sheet. Sprinkle with oil, spices, and herbs.
Bake at 425 degrees for about 15 minutes.
Sprinkle with cheeses.
Bake to 425 - 450 degrees or until potatoes are golden brown and cheeses are melted.
Serve as a snack or with pork chops, chicken, meatloaf, or hamburgers.
