1 pkg. frozen spinach, chopped
1 c. skim milk
1 T. cornstarch, rounded
Pinch of white pepper
1/4 tsp. nutmeg
1 tsp. butter or margarine

Directions:
Directions:
Dissolve cornstarch in the milk and set aside.
Prepare the spinach according to the package directions.
When it is cooked, but still on the stove, add the pepper and nutmeg. Turn the heat up a bit and add the milk mixture. Bring it all to a boil. Mixture thickens quickly, so stir constantly.
When the mixture reaches a good consistency (usually 1 to 2 minutes after the boiling point is reached), turn off the heat and stir in the butter.
No need to say you didn't use any cream. No one will know!
