1 bag cheese tortellini (use meat if desired) 1 can enchilada sauce 1c. grated cheddar cheese
Boil tortellini according to pkg. directions using the shortest time. Mix with enchilada sauce and pour into square baking dish (1 1/2 qt.). Cover the top with cheese, to taste. Bake at 350º until cheese is browned and sauce is bubbling, about 30 minutes.
This is the first time I have tried writing this down. The whole dish is pretty easy to adjust to your own taste.
