3 eggs 2 c. sugar 1 c. oil 1t. vanilla 1t. cinnamon 1t. salt 1t. soda 1/4 t. baking powder 2 c. grated zucchini 3 c. flour 1 c. chopped walnuts
Beat eggs until foamy. Add sugar and oil and beat until mixed. Add flour and spices until blended. Stir in zucchini and nuts. Turn batter into a greased 9X5 loaf pan and bake at 350º for 1 hour and 20 minutes. Remove from pan and cool on rack. Pan will be very full.
