2 c. thinly sliced apples
1 3/4 c. sugar
2 large eggs
1/2 c. oil
2 tsp. vanilla
2 c. flour
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 c. coarsely chopped walnuts
1/2 c. raisins
1/2 c. cold coffee

Combine apples & 1 cup of sugar, set aside. In large bowl, mix eggs, oil, 1/2 cup sugar and vanilla. Beat 1 minute.
Add dry ingredients alternately with apples. Stir in raisins, walnuts and coffee.
Bake in 13x9" pan at 350 for 30 - 35 minutes.
