2 1/2 c whole wheat flour
2 1/4 c white flour
4 cups white sugar
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 1/2 tsp. salt
1 1/2 tsp. nutmeg
1 1/2 tsp. cinnamon
1 1/2 tsp. gloves
6 eggs (can substitute 4 extra large eggs and 1 T. of ground flax seed)
1 (29 oz.) can pumpkin
1 cup applesauce
2 cups chocolate chips
OR 1 1/2 c raisins (either can be omitted)
1 cup chopped pecans (can be omitted)

1. Preheat oven to 350. Soak raisins in hot water for 10 minutes to plump. Spray muffin tins with Pam.

2. In a large bowl, combine dry ingredients. In a separate bowl mix eggs, pumpkin and applesauce until smooth. Add this mixture to the dry ingredients and stir until thoroughly mixed to make a smooth batter. Spoon batter into prepared muffin cups.

3.Bake medium muffins 18 minutes, Large muffins 30 minutes and small muffins 10 minutes.

This muffin recipe is huge and so plan enough time to bake them all. The muffins are healthy and delicious. They freeze well and make great snacks or a quick and healthy breakfast. They work best without muffin papers.
