3 eggs
1/2 c. sugar
1 tsp. vanilla
1 c. flour
1 c. milk (a little more if needed for good consistency)
oil for cooking crepes.....small amount in skillet.

Filling:
1 16.0z carton cottage cheese (small curd)...can be blended to make it smooth'
3/4 cup sugar
1 tsp. (to taste)
Mix well.

Directions:

Beat 3 eggs until almost lemon colored and thick....high speed of mixer. Turn mixer to medium and add 1/2 c sugar, a little at a time. Add 1/2 tsp vanilla...continue to beat.
Turn beater down to low setting and add 1 cup flour and 1 cup (+) milk alternately.

Heat skillet with small amount of oil. Spoon batter (about 1/2 cup at a time) into heated skillet to make a large pancake. Cook till bubbles form..DO NOT BROWN, then flip pancake over and cook till firm on that side. Put pancake on a flat plate and spread filling over pancake. Roll up like a jelly roll. Can be used with syrup or as is.

You can also turn crepes into savory treats by adding garlic, onions, spinach, etc..to the cottage cheese and omitting the sugar and cinnamon.
