2 lb block Velveeta (cubed)
1 onion, minced
4 cans Ro-tel (drained, pick desired heat level)
8 oz green chile (mild or hot)
2 Tbsp butter
1 lb sausage, cooked/crumbled
1 lb broccoli florets, steamed
1 cup milk
cayenne to taste

Saute onions and sausage with butter. Add remaining ingredients and simmer. Serve with warm tortillas or chips.

I place the broccoli in a ziploc with a touch of water to steam them. This is a yummy way to add veggies (corn, tomatoes, asparagus, green beans, etc). You can make it as mild or as spicy as you like! Great for game day!
