3 Cups of Milk
6 Tbsp. Yellow Corn Meal
1/3 Cup of Light or Dark Molasses
2 Tbsp. Butter
2 Eggs
1/4 Cup of firmly packed Brown Sugar
3/4 Tsp of Cinnamon
1/2 Tsp of Ginger
1/4 Tsp of Salt

Directions:
Directions:
In Medium Sauce Pan, combine milk, cornmeal, molasses, butter, cook and stir over medium heat of 10 minutes or until mixture thickened. Remove from heat.
In a large bowl combine eggs, sugar, cinnamon, ginger and salt. Gradually add about 1 cup of hot cereal and return egg mixture to sauce pan and remaining cornmeal mixture. whisk unitl combined. Pour into a 1 1/2 quart baking dish and Bake about 1 1/2 hours, Serve with whipped cream, hard sauce or ice cream.
