1 qt. water
2 c. biscuit mix
2 tsp salt
3/4 c. milk
2 carrots, sliced
1/2 c. parsley, chopped
1 onion, sliced

1 stalk celery, including leaves

4-5 lb. stewing chicken, cut into pieces

1/3 c. flour

1 c. milk

1. Heat the water in stewing pan. Add salt, carrots, onion and celery; then add the chicken. Cover; simmer (do not boil) 3-4 hours or until meat is tender.
2. Remove cooked chicken from the broth and keep hot. Strain the broth and measure it. Add enough water to make 3 cups broth. Return the broth to the saucepan.
3. Combine flour with a cup of milk. Shake in a covered jar or beat to blend thoroughly. Add the flour mixture slowly to the hot broth, stirring constantly for about 5 minutes. Return chicken to the thickened broth.
4.Make dumplings 20 minutes before serving. Combine the biscuit mix with chopped parsley; stir in 3/4 cup milk, until the flour is dampened. Drop dumplings from a spoon onto chicken pieces, (not into the liquid) in the boiling stew. Cook uncovered over low heat 10 minutes; cover and cook 10 minutes longer.
