Salmon with Vegetable Topping Recipe

2 - 8 ounce salmon fillets
3 t. fresh lemon juice
1/2 cup finely grated carrot
1/2 cup finely chopped tomato
3 t. chopped green onions
3 T. mayo
2 T. cream cheese, soften
2 T. minced fresh parsley (I like cilantro)
1/4 teas. pepper

Arrange the fillets in a baking dish and drizzle with lemon juice.
Combine the carrot, tomato and green ions in a bowl, mix well.
Stir in the mixture of the mayo, cream cheese, parsley and pepper.
Mound on top of each fillet - covering completely.
Bake at 400 for 20 minutes.
