Fresh ham or leg of pork roast
1/2 tsp. garlic powder
1 15 oz can of crushed pineapple, drained reserving juice
2 Tbsp. frozen orange juice concentrate
4 tsps. soy sauce
2 tsps. corn starch
1 tsp. brown sugar
1 tsp. fresh ginger grated
1/8 tsp. curry powder

Directions:
Directions:
Cook roast at 375 degrees in a shallow roasting pan for 1 1/2 to 2 hours or until internal temperature reaches 150 degrees. Baste with the sauce during the last 30 minutes of cooking Remove from oven and let it rest.

Directions for Sauce:
In a medium sauce pan put pineapple juice, OJ concentrate, soy sauce, cornstarch, brown sugar, curry powder and ginger. Whisk to blend thoroughly. Bring to a boil and reduce heat and simmer 3 to 5 minutes or until thickened. Remove 1/4 cup of the sauce and save for basting the roast during the last 30 minutes in the oven.

Add pineapple to remaining sauce and cook and stir 3 minutes more. Set aside to serve over roast.
