3 Eggs
3/4 Cup Sugar
2 Cups Grated Zucchini
3 tsp Vanilla
3 Cups Flour
1 tsp Salt
1 tsp Soda
3 tsp Cinnamon
1/4 tsp Baking Powder
1 Cup Ground Walnuts (opt)

Directions:
Directions:
Beat eggs until light and fluffy add oil, sugar, zucchini and vanilla. Mix lightly, but well. Mix nuts in flour. Add the remaining ingredients and mix well. Pour into 2 greased bread pans and bake at 325* for 1 hr. or until tests done. Remove from pans and cool. Freezes good
