Ingredients: |
Ingredients: 6-8 strips of bacon cut into 1/2 inch squares 1/2 medium onion, diced 1/2 bell pepper, diced 1-2 Jalapeno Peppers diced ( I use just 1/2 pepper) (1) 55 0z. can baked beans (1) 8 oz can of pineapple chunks, drained 1 cup packed brown sugar 1 cup ketchup 1/2 to 1 tbsp dry mustard (I use 1 tsp.)

Directions:Saute bacon pieces in pan until crispy and remove from pan with a slotted spoon. Saute onion, bell pepper, and jalapeno pepper until tender. In a mixing bowl combine beans, pineapple, brown sugar, ketchup and dry mustard. Stir in bacon pieces and vegetables. Add up to 1/2 cup extra ketchup if mixture seems dry. Pour into a 9x13 baking dish. Place into 350º preheated oven for 1 hour. |

Notes: Since the jalapeno peppers and dry mustard are so hot, I reduced the amounts of each. It depends on your taste. This dish can also be smoked for 2 1/2 to 3 hours. Make sure the temp. of the baked beans reaches 160º
