4 cups diced squash (2 yellow & 2 zucchini, or any combination of both)
2 tsp. chopped onions
1/2 cup grated carrots (I use 1/4 cup)
3/4 tsp. salt
1/4 tsp. pepper
8 oz. sour cream
1 can cream of chicken soup
2 cups Pepperidge Farm herb stuffing mix
1 tbsp. butter, melted

Directions:
Directions:
Simmer or steam squash, onion and carrots together until tender. Drain off liquid. Add salt, pepper, sour cream & soup and mix well. Layer a 9 x 13 dish with 1 cup of stuffing mix. Pour squash mix over stuffing. Sprinkle other cup of stuffing mix over the top and drizzle with melted butter. Bake at 350 for 30 minutes.
