Chicken Scampi Recipe

1/2 cup butter
1/4 cup olive oil
1/4 cup green onions, finely chopped
1 tbsp. garlic, minced
Juice of 1 lemon (don't use a large one or sauce will be too thin)
2 lbs. boneless skinless chicken breasts, cut into 1/2" pieces
1 tsp. salt
1/2 tsp. freshly ground black pepper
1/4 cup minced fresh parsley
1 tomato, chopped (I use 2, and squeeze most juice out)
Buttered noodles or cooked rice (We prefer medium egg noodles)

In skillet, heat together butter and olive oil, and saute green onions and garlic. Add lemon juice, chicken, salt, pepper, and parsley. Continue cooking, stirring constantly, for 5 - 8 minutes, or until chicken is done. Add tomatoes and heat through. Serve over noodles or rice. Makes 4 - 6 servings.
