3 medium zucchini-grated 1/3 c grated Parmesan cheese 1/4 c flour 1 tsp baking powder 1/2 tsp salt 1/4 tsp black pepper 2 eggs-slighten beaten 1/2 c chopped onion
Place zucchini in a colander and squeeze out as much moisture as possible. set aside. In large bowl. combine dry ingredients. Add cheese, eggs, zucchini and onion-mix well. Preheat griddle: grease. Pour 1/4 c batter for each pancake. Cook 4-5 minutes. Turn, brown other side.
