1 pint Roma or cherry tomatoes
3 yellow squash, sliced thin
1 green pepper, 3/4" dice
1 onion, chopped
2-3 garlic cloves, minced
crushed red pepper to taste, optional
1 lb Italian sausage, Hot or Mild
Fresh basil, optional
1/2 box fettuccine, or more

Directions:
If using Roma tomatoes, cut in quarters. If using cherry tomatoes, halve.
Remove sausage casing and slice. Fry sausage until browned then remove from the pan. Add green peppers, onion, squash and garlic to the pan and stir fry for 3-4 minutes. Add tomatoes and cook for 3-4 minutes more. Meanwhile, cook fettuccine, drain and put into a large pasta dish. Put vegetables and sausage on top and toss. If you want sprinkle fresh basil in vegetables before dumping on pasta. Serves 4
