1 lb lean ground beef
1 large onion, chopped
2 cloves minced garlic
salt and pepper to taste
4 medium zucchini, grated
soy sauce to taste
1 cup cheddar cheese, shredded
3 cups cooked brown rice

Directions:
Directions:
In a large skillet, brown ground beef with onion and garlic, seasoning with salt and pepper. Add grated zucchini and season with soy sauce to add flavor. Cook uncovered until zucchini is tender. Mix in shredded cheese until heated through. Spoon over hot brown rice to serve.
