1/4 cup sugar
2 tbsp. flour
1/2 tsp. salt
1/2 cup orange juice
1 tbsp. orange rind
2 lbs. beets, cooked and skin removed

Directions:
Directions:
In saucepan, blend together sugar, flour and salt. Gradually add juice, stirring until smooth. Add rind. Cook, stirring, until thickened. Serve over diced or sliced beets.
