8 vine ripe or Roma tomatoes, seeded and chopped
1 pkg. fresh basil, chopped fine
1 small red onion, chopped fine
1 1/2 Tbsp. Balsamic vinegar
3 Tbsp. olive oil
2 cloves garlic, minced
salt and pepper to taste
1 French Baguette
4 oz. shredded Parmesan cheese (not grated)


Directions:

1. Heat oven to 400
2. Slice baguette on the diagonal and toast in oven until lightly crisped.
3. Combine tomato, basil, red onion and garlic in a bowl.
4. Add olive oil to coat and add vinegar. Season to taste.
5. Spoon on toasted bread slices and top with cheese.

Personal Notes:
Personal Notes:
I make the tomato mixture and toast the bread the day before to save time. The mixture tastes better when it has time to sit and the bread holds up a little better when it is slightly stale. Just top the bread with the tomato mixture and add the cheese right before serving.
