Chicken thighs, boneless, skinless are best (2 per person)
Red bell pepper, cut into 1 squares
Green bell pepper, cut into 1 squares
8 mushrooms, quartered
1 large red onion, cut into large pieces
3 cloves garlic, chopped
Roma tomatoes, chopped
Dried oregano, season salt, lemon pepper
Egg noodles
Parmesan cheese
Crushed red pepper

In a large casserole dish, put chicken thighs in a single layer. Top with vegetables and sprinkle seasonings on top. Cover loosely with foil. Bake at 350 degrees for 30 minutes. Remove foil and bake another 20 - 30 minutes. Meanwhile, boil egg noodles as directed on package. When chicken is done, pour juices into drained noodles. Serve noodles with chicken and veggies on top. Sprinkle with Parmesan and crushed red pepper, if desired.
