4 or more pork chops
2 tbsp. flour
1 tsp. salt
2 tbsp. shortening
1/4 cup honey
1/2 cup orange juice
1/2 cup lemon juice
3 tbsp. tomato paste
1/2 cup raisins
1 lemon, thinly sliced

Directions:
Directions:
Trim fat off chops. Blend flour and salt and rub into chops. Brown chops with shortening in skillet and drain excess fat. Blend together honey, orange and lemon juices. Pour over chops. Cover tightly and simmer over low heat about 1 hour. Blend tomato paste into pan sauce. Add raisins and lemon. Cover and continue cooking about 20 minutes or longer until meat is tender.
