4-5 cups red potatoes
1/2 cup melted butter
1/4 cup minced onions
1/4 cup of minced green pepper
1/2cup flour
2 Tbls chicken base
4 cups half and half
4 cups milk
4 oz Velvetta cheese melted(8 oz if you want it cheesier)
white pepper to taste
Garlic powder to taste
1 tsp hot pepper sauce
1/2 # bacon fried and crumbled
1 cup Cheddar cheese shredded
1/2 cup green onions

Directions:
Directions:
1. Dice unpeeled red potatoes into 1/2" cubes. Place in a large pan and cover with water and bring to a boil. Let boil 10 minutes or nutil 3/4 cooked.
2. In another large pan, combine butter onion and green pepper and saute. Add flour mixing until smooth. Place over low heat and add half and half and milk stirring until mixture slightly thickens.
3. Add melted cheese and seasoning.
4. Drain potatoes and add to soup. Cover and cook on low heat for 20-25 minutes. Stirring frquently so mixtue doesn't stick.

For serving place soup in bowls and sprinkle with bacon, cheddar cheese and green onions.
