1 c. sugar
6 tbs all-purpose flour
2 c. sharp cheddar cheese, grated
2 20-oz cans pineapple chunks, separate from liquid
6 tbs pineapple juice, reserved from chunks
1-2 c. Ritz cracker crumbs
8 tbs (1 stick) butter, melted

Pre-heat over to 350

Grease med size casserole dish w/ butter.
In large bowl, stir together sugar and flour. Gradually stir in cheese. Add drained pineapple chunks and stir until well combined. Pour mix into dish.
In another med bowl, combine cracker crumbs, melted butter and reserved pineapple juice. Stir until evenly blended. Spread crumb mixture on top of pineapple mixture in casserole dish.
Bake for 25-30 minutes until golden brown.
