4 Tbsp (1/2 stick) unsalted butter
4 large onions, halved and thinly sliced
1/4 C sugar
Salt+Pepper to taste
(Don't forget beef broth has salt)
6 C beef stock or broth
2 Tbsp of ruby Port (optional)
Large thick slices French bread, toasted
1 C grated Gruyere cheese

Directions:

1. Melt the butter in a soup pot. Add the onions and wilt over medium-low heat, covered for 20 minutes, stirring occasionally.
2. Sprinkle the sugar over the onions, toss, and cook, uncovered, until onions caramalize (turn slightly brown), about 15-20 minutes. Sprinkle with salt and pepper.
3 Add 3 cups of the broth and simmer, uncovered, over medium heat for 15 minutes. Then add the remaining 3 cups of broth and the port. Cook until the broth is rich in taste, another 30-40 minutes.
4. Divide the soup among ovenproof bowls. Top each with a slice of toasted French bread, and sprinkle the cheese evenly on top. Place under the broiler, or in oven at 350, until cheese melts and soup is bubbly.
