4 1/2 cup sugar
2 tsp cinnamon
1 cup cornstarch
1/4 tsp nutmeg
3 Tbsp lemon juice
5 1/2 - 6 lb tart apples, peeled, cored and sliced

Directions:
Directions:
In large saucepan, blend sugar, cinnamon, cornstarch and nutmeg with 1 tsp salt. Stir in 10 cups water. Cook and stir until thickened and bubbly. Add lemon juice. Pack apples into hot jars, leaving 1 inch headspace. Use spatula to help distribute syrup. Adjust lids and process in boiling water bath (pints for 15 minutes and quarts for 20 minutes). Makes 6 - 7 quarts.
Before Serving: Prepare pastry for 2 crust pie. Add 1 quart pie filling. Bake at 400 for 50 minutes.
