3 1/4 cup flour
2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp salt
4 eggs
1 1/3 cup sugar
1 cup oil
3 cups mashed bananas coarsley mashed very ripe(6)
1/4 heavy cream
2 tsp vanilla
1 cup chopped nuts

Directions:
Directions:
1. Preheat oven to 350. Butter and flour 2 loaf pans, knocking out excess flour.
2. Sift together 3 1/4 cup flour, soda cinnamon and salt into bowl
3. beat eggs, and sugar until very thick, about 10 minutes. Reduce speed and add oil in a slow stream.. Add bananas, cream, and vanilla.
4. Fold in flour and nut mixture.
5. Divide batter into both pans and bake in middle of oven until golden brown and a toothpick comes out clean, 1-1 1/4 hour
6. Cool for 10 minute and then turn out onto a cooling rack.
7. bread keeps well at room temperature for 2 days, in the frig for 2 weeks and in the freezer for 1 month.
