1 pkg yeast
1/2 cup warm water
1 cup milk, room temperature
2/3 cup shortening
1/2 c sugar
1 1/2 tsp salt
2 eggs
1 cup mashed potatoes6 cups sifted flour
1 T. Melted Butter

Directions:
Directions:
Dissolve yeast in warm water. Cream shortening, sugar and salt; blend in eggs and mashed potatoes. Add yeast mixture to milk and stir into creamed mixture. Add flour to make soft dough. Turn onto floured board and knead thoroughly. Place in large greased bowl, cover to let rise in warm place until doubled (2hrs). Punch down and knead again. Brush with butter .(Can be refrigerated or baked at this point) Pinch off dough and form into rolls. Place 2 inches apart on greased baking sheets. Cover and let rise (2 hrs). Bake 350 for 15-20 minutes or until lightly browned. Makes 2 1/2 dozen rolls.
