5 cups sliced, peeled fresh peaches
3/4 cup sugar
2-3 Tblsp. flour
1/4 tsp. cinnamon
2 Tblsp. butter
1 recipe Plain Pastry

Directions:
Directions:
Scald peaches in boiling water to remove skins. Slice and mix with sugar, flour, and cinnamon. Spread in 9-inch pastry-lined pie pan. Dot with butter. Adjust top crust, flute edges. Bake in hot oven 400 for 15 minutes, then turn oven down to 350 and continue to bake for another 30-35 minutes.
