2 cups whole wheat flour
1 1/4 tsp. salt
1/2 cup dried potato flakes or 3 T. potato flour
1/4 cup nonfat dry milk
2 1/4 tsp. instant yeast

1 cup warm water
1/4 cup. orange juice
4 T. butter, cut into pieces
3 T. honey

Mix dry ingredients. Add liquid ingredients. Mix. Add last 1 cup of flour a little at a time to make a soft dough. Knead until very smooth. Cover and let rise 1 to 2 hours, until quite puffy.

Lightly grease a 9 x 13, 11-inch square, or 12 inch round pan.

Shape rolls. Divide into 16 pieces. Shape each piece into a rough ball by pulling the dough into a very small knot at the bottom, then rolling it under the palm of your hand into a smooth ball.

Place rolls in the prepared pan, spacing them so they won't touch one another. Cover. Let rise for 1 1/2 to 2 hours. They'll become very puffy and will reach out and touch one another.

Uncover and bake at 350 for 23-25 minutes.
