For the lemon oil:
1/3 cup extra virgin olive oil (Use a good, fruity olive oil.)
zest of 1 lemon

For the pasta:
1 pound pasta (angel hair or linguine)
2 Tbs. olive oil
2 shallots, diced
2 garlic cloves, minced
1 pound raw shrimp
1/4 cup fresh lemon juice
zest of 1 lemon
1 tsp. salt
1/2 tsp. freshly ground black pepper
3 oz. fresh spinach
1/4 cup chopped fresh flat-leaf parsley

For the lemon oil:
Combine the olive oil and lemon zest in a small bowl and reserve.

For the pasta:
Bring a large pot of water to a boil over high heat and add salt. Add the pasta and cook until tender but still firm to the bite, stirring occasionally. Drain pasta, reserving about 1 cup of the cooking liquid.

Meanwhile, in a large, heavy skillet warm the olive oil over medium heat. Add the shallots and garlic, and cook for 2 minutes. Add the shrimp, and cook until pink. Add the cooked pasta, lemon juice, lemon zest, salt and pepper. Toss to combine. Turn off the heat, and add the spinach. Add the reserved lemon oil to the pasta (For a less intense lemon flavor, strain the zest out before adding the lemon oil.) Toss until spinach is wilted. The reserved pasta cooking liquid can be added as needed. Add the chopped parsley to the pasta and toss. Serve immediately.
