1 baked pie shell
1 1/2 cups sugar, divided
1 cup milk
3 egg yolks, beaten
3 egg whites
4 Tbs. flour
1 stick butter
1 tsp. vanilla
3 Tbs. sugar

Directions:
Directions:
Combine beaten egg yolks with 1 cup sugar, flour, milk, and butter in a saucepan over medium heat. When mixture is hot and beginning to thicken, put 1/2 cup sugar in a heavy skillet and caramelize. Keeping the first mixture hot, add caramelized sugar (mixture will bubble violently) and cook until thick, stirring constantly. Add vanilla. Pour into a baked pie shell.

Beat egg whites until soft peaks form; add 3 Tbs. sugar and continue beating until stiff peaks form. Cover pie with meringue and brown in oven.

Serves 8.
