1 Tbs. butter
1 Tbs. olive oil
1/2 small onion, diced
2 garlic cloves, minced
1/4 cup pine nuts, toasted
1 cup golden raisins (or dried cranberries)
1 cup uncooked long-grain rice
2 1/4 cups water
1/2 tsp. salt
2 Tbs. chopped fresh parsley

Directions:
Directions:
Melt butter in olive oil in large saucepan over medium heat; add onion, and saute 4-5 minutes or until tender. Add garlic and next 3 ingredients; cook, stirring constantly, 3-4 minutes.

Add 2 1/4 cups water and 1/2 tsp. salt. Bring to a boil; reduce heat to low, cover, and simmer 17-20 minutes or until liquid is absorbed and rice is tender. Stir in parsley.
