3 tbsp. Caribbean jerk seasoning
1-1/2 lbs. boneless skinless chicken thighs
1 large green and/or red bell pepper, chopped
1 small to medium onion, chopped
1/2 cup chicken broth
1/4 cup ketchup
6 hoagie buns

Directions:
Directions:
Rub jerk over chicken. Place pepper and onion on bottom of crock-pot then place chicken over vegetables. In a small bowl, combine broth and ketchup. Mix well, pour over chicken and cook on low for 6 - 8 hours. Remove chicken and shred; return to slow cooker and mix well. Serve on hoagie buns.
