1 Avocado peeled and quartered
3 1/4 c Chicken Stock, cooled
4 T Scallions, chopped
2 T Yogurt
Salt and pepper to taste

Directions:
Directions:
Combine the avocado, chicken stock, 2T of scallions, and yogurt in a blender and puree. Chill at least 2 hours before serving. Just before serving season to taste with salt and pepper, and sprinkle the remaining scallions over the top of the soup.
