2 each lamb loin
Dijon mustard as needed
Bread crumbs as needed
2 sprigs fresh oregano-chopped
2 sprigs fresh rosemary-chopped

Directions:
Directions:
Combine the bread crumbs and chopped herbs. Liberally coat the lamb with Dijon mustard. Roll the lamb in the bread crumbs until evenly coated. In a 350 oven roast the lamb until rare - approximately 25 minutes, or until internal temperature registers 145 on a meat thermometer. Cut the lamb into slices and serve.
