2 c sifted flour
2 tsp baking powder
1/2 to 3/4 tsp sale
1/2 to 2 T sugar
1 egg
1 c milk
3 T melted fat

Directions:
Directions:
Sift dry ingredients into bowl. Beat egg and add to milk. Add melted fat to liquid ingredient's. Turn liquid all at once into dry ingredients and stir until dry ingredients are just dampened (about 25 revolutions). Fill oiled muffin pans about 1/2 or 2/3 full of batter. Bake in hot oven 425

NOTE: A muffin batter when mixed should have a lumpy appearance, and should drop in lumps instead of stringing from the spoon. If beaten, the batter will appear smooth, and the muffins will show tunnels and peaks.

This again was from my 4-H cookbook. As I remember I never did too well with muffins so didn't take them to the fair. Also I have a note that it cost 15 cents to make a recipe. Probably around 1948 to 1950.
