2 T. olive oil
1 small onion, chopped
1 T. chopped garlic
2 sliced tomatoes
1 red and 1 yellow bell pepper, chopped
1 c. frozen peas
1 c. frozen green beans
1 c. frozen corn
1/2 c. cut broccoli
1/2 c. sliced mushrooms
3/4 c. of rice
1 c. vegetable broth (1 cube vegetable bouillon dissolved in 1 cup water)
salt, dried parsley
1 T. lemon juice

Directions:
Directions:
Fry the onion and garlic in a large skillet with the olive oil. Add frozen and cut vegetables, and cook for about 10 minutes on medium heat. Add the rice and a dash of salt and parsley. Mix well and add the broth. Cook over low heat for 20 minutes, stirring occasionally. Remove from heat, and stir in the lemon juice.

This is a vegan dish. I made it one evening when we were having a vegan friend over for dinner. As it turned out, even we "meat eaters" loved it!
