1 pound boneless, skinless chicken breasts
1/2 C. peanut butter
2 T. soy sauce
2 tsp. minced garlic
1 1/2 tsp. chili powder
1 tsp. ginger
8 oz. spaghetti
1-12 bag veggie medley-or fresh

Directions:
Directions:
Place chicken in a skilled and add enough water to cover; bring to a boil and cover, reduce heat to low and simmer gently until cooked through (10-12 min). Transfer chicken to cutting board and shred when cooled. Whisk peanut butter, soy sauce, garlic, chili powder, and ginger in large bowl. Cook pasta until not quite tender, about 1 min. less than directions. Add veggies and cook til tender, drain, reserve 1 cup of pasta water. Stir the reserve liquid into peanut sauce, add pasta, veggies and chicken, toss to coat. Eat warm or cold.
