4 1" thick center-cut salmon fillets (6oz.)skinned.
salt and pepper
2 sheets matzo, finely ground
3 tbsp. finely chopped flat-leaf parsley
3 tbsp.finely chopped fresh thyme
1 Lemon, grate peel, plus t tbsp.lemon juice
1 tbsp. grainy mustard
1/4 cup extra-virgin olive oil
4 tbsp. butter, melted

Pre-heat oven to 425 f. On a parchment paper lined baking sheet, place the salmon season with salt and pepper.

In a medium bowl, combine the matzo, parsley, thyme,lemon peel,lemon juice, and mustard. Stir in the olive oil and butter.

Cover the top of each salmon fillet completely with the matzo mixture. Pressing well to adhere. Roast the salmon until it is just cooked through but still translucent in the center. About 10 minutes.
