1 1/2lb 10-15 count jumbo prawns (fully shelled and deveined)
1/2cup walnut halves (rinsed and drained)
1/2cup cornstarch or tempura batter mix
About 1/2cup of mayonnaise
1tbsp sweetened condensed milk
1tbsp honey
The juice from half of a lemon
Enough oil for deep frying
FOR THE WALNUTS:
1/2cup water
1/2cup sugar

Directions:
In a sauce pan, bring your water to a boil. Then add your sugar and continue boiling until mixture starts to brown. Be sure you are constantly stirring. Once brown, Add walnuts to the mix and boil them for a couple minutes. Remove the walnuts on to a piece of parchment paper and set aside.
Heat up your oil to Med.Hi heat or 350 degrees
Next, pat your prawns dry, and add your egg whites, making sure you get the egg all over your prawns. Now, dredge prawns in corn starch ( or tempura mix) and deep fry for 5 to 6 minutes, turning once. Remove prawns from oil to drain on paper towels.
Now, in a bowl large enough to hold prawns, combine mayonnaise,condensed milk, honey, and lemon juice. Mix well. fold in your prawns and walnuts to the mayo. Remove to a plate or eat it out of the bowl. Best served over , you guessed it. RICE RICE BABY....
