1 lb. ground sausage
1 large onion, chopped
2 eggs, lightly beaten
1 1/2 c. self-rising corn meal
1 (17 oz.) can cream-style corn
3/4 c. milk
1/4 c. vegetable oil
2 c. (8 oz.) grated Cheddar cheese

Directions:
Directions:
Preheat oven to 425. Grease a 10 1/2 inch skillet or a baking dish. Set aside. Brown sausage and onion in a medium skillet. Drain well. Combine eggs, corn meal, corn, milk and oil. Pour half of corn meal mixture into prepared dish; sprinkle with sausage mixture and cheese. Pour remaining batter over top. Bake 30 to 40 minutes. Let cool 10 minutes. If using plain corn meal, add 2 1/4 tsp. baking powder and 3/4 tsp. salt to the corn meal.
