2 cans cooked carrots
1 stick margarine
1 lb. Mexican Velveeta
1 stack Ritz crackers

Directions:
Directions:
Melt cheese with 1/2 stick margarine. Mix with drained carrots. Crumble and mash the crackers and mix with 1/2 stick melted margarine for topping. Put carrots in baking dish and cover with topping. Bake at 350 for 20 minutes or until bubbly.
